"Gonna" is cool since it's like a made-up short-hand like an unofficial "don't" instead of "do not".
"Should of" is just wrong. It's not a short-hand, but an error.
Other examples: "Try to do" vs "Try and do", "I done it" vs "I did it OR I'd done it"
That stuff all happens commonly in Australian speech too. I was just amused that they slipped up at the end after trying to make the video all professional and serious and everything.
