uh; from what i remember itachi *ran* from jiraiya seeing that he was fighting a losing battle only to fight another day. Itachi is strong, but not invincible and the reason why he can beat oro is that he is the worst possible match-up. this isnt dragon ball z (yet hopefully) with the power level cheapness, but with actual counters and advantages, etc. Jiraiya isnt completely that type of jutsu based, and what jiraiya uses a lot are summonings, and Rasengan with which sharingan shouldnt be able to steal as its really just from what we can see chakra focused into a ball (requiring chakra control), and a helluva lot of chakra. even if you can see the move with the sharingan it often wont matter if you dont have the chakra to actually pull it off, and against a combat type (rather than a jutsu type), the sharingan actually has a bit of a problem. IE against Hyuuga Clan, or vs. Gai lets say.
itachi is strong, but he depends too much upon sharingan (even said by his partner), and from that there are quite a few disadvantages the immense chakra drain and strain put upon the eyes and body). and the sharingan as cool as it is aint everything and has its own weaknesses as well.
