So, let's just say if Gaara is rendered unconscious because his mind and body shut down, the demon who feeds off of his life force is likewise rendered unconscious (or disabled). When Gaara is merely sleeping, his mind and body are still fully funtional and capable of fighting, however, Gaara's will is not there to hold the demon back.
